Ingredients

Holy Guacamole!

Tasty, Tangy, Creamy, Crunchy.  Healthy, too!

Here's how you make it.

 
2 ripe Hass avocadoes

2/3 cup red onion,  finely chopped

Juice of 1 lime

1 small vine tomato,  finely diced

1/2 habenero pepper, minced and
with the seeds removed

1/4 cup finely chopped fresh cilantro

1/4 cup finely chopped green onion

1 clove roasted garlic finely minced (optional)

salt and pepper to taste

 


Check your avocados for ripeness by lightly pressing on the bottom.  If it gives a little bit, it is ripe.

Slice the avocados from end to end and remove the pits.  Using a sharp knife, score into the fruit to the skin in a grid pattern and scoop it out into a bowl using a spoon.  Make sure you get all the green just under the skin.

Squeeze the juice of 1 lime into the bowl.  Using a fork, lightly mash everything together to a creamy, consistency.  Some small chunks of avocado may remain.

Add the chopped red onions, cilantro, minced habanero pepper and chopped green onion.  (Roasted garlic is optional.)  Mix it all up really good.

Add the diced tomato and lightly mix it in.  Add salt and pepper to taste.

Using a rubber spatula, remove the guacamole from the mixing bowl and transfer it into a decorative serving bowl.  Chill in the refrigerator for a few hours to allow the flavours to incorporate.  Garnish in an artistic fashion and serve with President's Choice RESTAURANT style premium white corn tortilla chips.

Caution:  Once you taste it, you will want to make it again and again!  The magic ingredient that gives it the tasty, tangy flavour is the lime juice.  C'est delicieux!!!
